It has been awhile since writing to you last and, I can’t wait to share what I have eaten. Since becoming vegan I have tried, tested and, made a lot of vegan food and, now that I feel I kind of have a grasp on the food part I jumped on the workout bandwagon. Yes, I do not like to admit that I let my workouts slip but, I did and, I am certainly paying the price. After making the mistake of thinking just because I am vegan I don’t have to work out as hard I have gained some unwanted lbs. Was I eating all whole foods? Haha, no I’m glad you mention that because it is good to be able to have more greasy vegan food or processed food but, I’m afraid my body does not really agree. I have been laying off the vegan “junk food” as much as possible and trying to carb the F up the right way. As you may have heard from one of my posts I joined the gym and, started swimming again! I am so happy to be back on track and rid myself of the evil unwanted extra fat. Today I swam for about 10 minutes, took a yoga class, and did zumba. Although, I am exhausted I feel fantastic. Let’s take a look at what I ate throughout my day.
I promised you all the recipe to this amazing nice cream on my instagram so, here it is.
Strawberry nice cream: Half a bag of frozen strawberries, 3-5 frozen bananas, and a little bit of almond milk. Blend in your food processor or blender until you get a creamy ice cream like consistency.
Chocolate nice cream: add a tablespoon or more depending on how chocolatey you want it to taste. The add 3-5 frozen bananas and blend untile you get the ice cream consistency.
Enjoy or add chia seed gel for a great topping. Look up how to soak chia seeds I am in the beginning stages of testing this.
Lunch was heaven in the backyard as a picnic! I love backyard picnics, don’t you? I also watched a few episodes of Charmed on Netflix!
Dip: Chick peas mashed and avocado
Salad: Bag of salad, carrots, apples, tomatoes
6:45 p.m. ish I went to the gym as I mentioned and, do all of those activites

Zumba was so much fun and, it really proved to me how much I want to get back in shape!
Of course ended the night with a mason jar with lemon water.
Dinner was leftover salad, dip from lunch, half an avocado, and two baked sweet potatoes.
It was a great day filled with accomplishments not only with my health but, with my work as well.
